Acai Breakfast Bowl
This is a great breakfast to enjoy if you want to get away from cereals and/or cooking in the mornings and you prefer to enjoy something in a bowl rather than a drink or you simply need a change. This would make a great afternoon snack for a pick me up or as a healthy dessert when you feel like something sweet.
Acai is a very potent berry high in antioxidants and can be very beneficial for a range of health problems. Acai are high in anthocyanins, polyphenols, vitamins A, C and E they also contain healthy fats, dietary fibre, amino acids, electrolytes and plant sterols. You can replace the banana with a green banana for the added benefit of resistant starch feeding your good bugs and supporting healthy blood sugar levels. Ingredients:
2 packets frozen Acai berry or 2 Tb of acai powder
½ frozen or fresh banana (can make this a green banana for less carbs)
1 cup of frozen or fresh berries (I used strawberries)
1 Tbsp. of cashews
1 Tbsp. of MCT or coconut oil (optional)
½ cup of water
1 tsp of honey (optional) or stevia
Toppings: Chopped brazil nuts, shredded coconut, hemp seeds, sliced kiwi fruit, chia seeds
Directions:
Place all the ingredients of the acai berry mixture into a high speed blender and blend well.
Place acai berry mixture into a bowl and top with your desired toppings.
Substitutions:
Banana – pineapple
Berries – any type of fruit
Cashews + water – nut or coconut milk
Honey – rice malt, maple syrup
